Sandwich

Sandwich is always my favorite when I think about lunch. During my time with Motorola (between 2005 till 2008), that was the time I fall in love with sandwich. Start ordering sandwiches whenever I’ve chance to go to cafĂ©. Start observing the ingredients which been “insert” in sandwich and start doing my own sandwich. Amy Lee was my first sandwich partner. In fact, she is sandwich lover too. I start sharing my “homemade” sandwich with Amy. Whenever I was inspired to create a new sandwich recipe, I always make another set for Amy to try. Thank you to Amy for “tango-ing” with me and my sandwich. She is my big supporter. I love to create surprises. No matter in my outlook, events or pastry. For me, that is fun. Life is meant to create more fun.

Gorgeous Nori, is my another sandwich buddy. Our favorite lunch venue is The Bakery Moments, Ikano. We named it as “paradise”. I still remember sandwich with chili sauce is her favorite. This lady is really “hot” ya. As I go, I slowly pick up the taste & ingredients combination on “outsider” sandwiches.

Whole meal sandwich loaf is always my first choice to go for sandwich. Italian Dijon Mustard & bbq sauce are my favorite dressing for sandwiches. Trust me, these 2 combination will go very well. For the ingredients, you can simply pick anything from your fridge or kitchen cupboard. Simply savory or sweet sandwich as you wish. Just follow your heart. Example for savory, egg sandwich (hard boiled / fried egg), baby spinach, mushroom & cheese sandwich, tuna mayo sandwich, roasted chicken sandwich, salmon sandwich, bacon & coleslaw sandwich, broccoli & cheese sandwich, ham & salad sandwich (with mustard & blueberry jam…MAMA MIA!), mushroom & cheese sandwich…….
As for sweet sandwich, you can go as simple as nutella sandwich, peanut butter sandwich, ice-cream sandwich, pumpkin sandwich, sweet potato sandwich, french toast…….. For myself, I go more on savory sandwiches. Mmmm….i am hungry now.

NYC SCONE (dairy, egg, soy free, agave sweetened)

Wow! Jul 13 was the day I’ve created another magic in my life. In fact, I was truly blessed by God. I’ve tested another scone recipe which is dairy, egg, soy free, agave sweetened. YES! I managed to find agave nectar in KL. agave nectar—a natural syrup from a cactus which is low on the glycemia index and often a safe alternative to most non-insulin dependant diabetics. It’s a Mexican products. I’ve been searching agave from internet and was about to order from internet. Costing was the issue which been holding me back from doing that. I’ve to admit that this recipe is very costing (all in organic ingredients). When come to think about health conscious, it’s definitely worth it. Organic and delicious alternatives free from the common allergens: wheat, gluten, dairy, casein and eggs.

Pleased to share the recipe as below.

Ingredients
2 cups spelt flour / organic unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup canola oil
1/3 cup agave nectar
1 tablespoon pure vanilla extract
1/3 cup hot water
1 cup fresh raspberries / sultanas
Directions
1. Preheat the oven to 375°F / 190°C. Line a baking sheet with parchment paper. In a bowl, whisk the flour with the baking powder and salt. Stir in the oil, agave nectar and vanilla. Stir in the hot water, then the raspberries / sultanas.
2. Scoop 12 mounds of batter 1/3 cup each onto the prepared baking sheet and lightly brush the tops with oil. Bake the scones for 20 minutes, or until golden. Let the baking sheet cool completely on top of a rack.
NOTES One Scone 168 cal, 7 gm fat, 0.5 gm sat fat, 23 gm carb, 3 gm fiber

Irish Scones


Last night after having body massange, I decided to try Irish recipe on doing Irish scone. I failed for the first time cos accidentally added too much milk in the flour mix. BUT NEVER GIVE UP. I decided to go for 2nd try. This round, i was so careful when pouring the milk. While baking, my house was full of irish scone aroma. Makes me feel like i'm leaving in Ireland. As result, it was so successful and i was so happy with the result which i'v been created - golden brown hot irish scones. YUMMY! It taste great when u serve hot scone with butter.

Ingredients:-
2 cups self raising flour
1 tspn baking powder
(sieve flour & powder, mix well)
115gram butter/ magerine
(add in cube butter, mix till crumb)
2 handful sugar
3 handful currents / raisin / sultanas
(mix well with the flour mix)
1 egg
100ml milk
(combine egg & milk, add into flour mix. Mix well with fork. Keep some egg + milk mixer for greasing purpose)
Bring dough to floured surface, make a ball dough, cut dough into 6 /7 scones.
Grease with the remaining egg + milk mix, bake for 10-15 mins for 190 degress celcius.
Cooling for 15 mins on the rack.

Yay! I've my own blog. For the very 1st experience.

Finally i've my own blog. It take such a long time for me to create this.
YES! I am ready to share my life with all of you... Year 2008, what a year! Been experiencing so many things even on the first 6 months. New job (attaching with mobile content industry), new environment (new working environment), new hobby (baking), new thinking ( let go and let it flow automatically), more creative (improved leaps & bounds) ===> all this making me abundant filled.
